Spicy Beef Soup

Serves 2 to 4


1 lb. lean beef, cubed

2 celery sticks, chopped

2 carrots, sliced

1 leek root, sliced

1 green bell pepper, chopped

1 small yellow onion, minced

2 tbsp olive oil

1 tsp smoked red paprika

1 tsp cumin

2 bay leaves

1/3 cup dill pickles, chopped

2 tbsp fresh parsley, chopped

salt and pepper


• Heat the olive oil in a large saucepan.

• Saute the meat and onion together.

• When the meat is browned and the onion is soft, transfer them to a soup pot.

• Add all the vegetables to the pot.

• Cover all the ingredients with water and add two more cups of water.

• Add the paprika, cumin, bay leaves, salt, and pepper.

• Simmer for 20 minutes.

• Garnish with the dill pickles and parsley.

• Serve hot.
