Stuffed Peppers Recipe
Cooking Time: 20 minutes
You will need for 4 servings:
4 good-sized peppers 1 4-oz. can shrimps red or green salt and pepper
1 small onion lemon juice
1 oz. butter 1 pint stock
4 oz. cooked rice
1 Wash the peppers, cut off the tops and remove the seeds and pith.
2 Peel and chop the onion finely.
3 Fry in the butter until soft.
4 Add rice and shrimps and season carefully adding lemon juice to taste.
5 Pile into the peppers and put into a greased fireproof dish.
6 Pour the stock over and bake about 20 minutes in a moderate oven (350°F – Gas Mark 4).
Onion pasty
Cooking Time: 25-30 minutes You will need for 4 servings:
12 oz. onions 2 tablespoons stock
3 oz. grated cheese or gravy
3-4 tomatoes 8 oz. short crust salt and pepper pastry (86)
1 Mince or chop the onion very finely.
2 Add grated cheese and tomatoes peeled and chopped. continued
3 Season carefully and add the stock.
4 Roll the pastry into an oblong shape. Put the filling on half, moisten the edges and fold over.
5 Press the edges well together and decorate as liked.
6 Put on to a baking tray, brush with egg or milk and bake in a moderately hot oven (375°F- Gas Mark 5).
