Summer Pudding Recipe
Cooking Time: a few minutes to stew fruit You will need for 4 servings: 1 strawberry jelly 2 tablespoons sugar about 6 slices bread custard or thin cream or plain cake 1 lb. mixed soft fruit (raspberries, redcurrants, etc.)
1 Dissolve jelly in a little hot water, make up to 1 pint with cold water.
2 Line the bottom and sides of a 1-pint basin with bread or cake.
3 Spoon a little jelly over the bread or cake until it is all soaked.
4 Stew the fruit in 1 pint water until tender, adding the sugar.
5 Stir the remaining jelly into the stewed fruit and leave until cold, but not set.
6 Pour into the prepared basin, cover the top with slices of bread or cake, pressing the top slices just into the jelly mixture.
7 Leave in a cool place until set.
8 Turn out and serve with custard or cream.
