Sweet potatoes are not a yam or related to the potato family; they grow from a vine but do grow underground as the potato does. The sweet potato has a much lower glycemic index (54) and that’s a great start, especially as it is packed with carbohydrate value (95%) with no fat content. It’s a good food for anyone overweight or athletic, plus it provides dietary fibre.

Apart from that, there’s a dash of iron (lmg), magnesium (25mg), phosphorus (47mg), folate (14mcg) and vitamin E (0.4mg). And there’s no doubt that sweet potatoes are one of the sweetest vegetables. They contain the full range of plant sugars: sucrose (2170mg), glucose (lOlOmg) and fructose (710mg), but these are ‘safe sugars’ with a moderate GI for a stable increase in blood sugars and energy.
