Teatime Biscuits Recipe
Cooking Time: 15-20 minutes
You will need:
8 oz. self-raising flour
3 oz. butter
3 oz. sugar
1 egg yolk
1 Sieve the flour.
2 Cream the fat and sugar, beat in the lemon rind and egg yolk.
3 Work in the flour, adding enough water to make a soft dough.
4 Roll out on a lightly floured surface about 1 in. thick.
5 Cut into rounds or fancy shapes with cutters.
6 Bake in a moderately hot oven (375°F – Gas Mark 5).
7 Lift carefully on to a wire tray with a palette knife. Leave until cold and crisp.
8 Dredge with castor sugar.
Flaky hot biscuits
Cooking Time: 10-15 minutes You will need:
7 oz. self-raising flour
1 teaspoon baking powder
I teaspoon salt
1 Sieve the flour, baking powder and salt together.
2 Cut the fat into pieces about 1 in. in size and stir into the dry ingredients.
3 Make a well in the centre and pour in the milk.
4 Stir with a knife and then knead lightly on a floured surface for about 1 minute.
5 Roll out to 1 in. thickness.
6 Cut out with a floured cutter and place on a greased baking tray so that they are touching one another.
7 Bake in a hot oven (425°F – Gas Mark 7).
8 Serve hot with butter.
