Theres no commercial substitute for your own freshly made yogurt. This is a simple way to prepare homemade yogurt. There are also electric yogurt makers available that work quite well. Or gendy pour the warm yogurt mixture into a one-quart thermos and leave it overnight. Then in the morning uncap it for a few minutes, reseal, and refrigerate. This makes an exceptionally smooth, rich-tasting yogurt.
Makes 1 quart
1 quart whole milk
2 tablespoons plain yogurt
Heat the milk just to the boiling point in a 2-quart saucepan. Cool to io5°F. to no°F. Use a candy thermometer to test the temperature. Pour into a deep bowl or a i-quart jar, then very gendv stir in the yogurt. Cover, and without shaking too much, place in a warm spot for 4 or 5 hours. An oven with a pilot light works well, or the top of the refrigerator near the back. The amount of setting time will determine the taste. The longer it sets, the more sour yogurt becomes. Refrigerate to set it more firmly. Reserve 2 tablespoons of yogurt to begin the next batch.
