Tomato And Cheese Fian Recipe
Cooking Time: 25-30 minutes You will need for 4 servings:
4-5 tomatoes, peeled 1 small onion, peeled and sliced and chopped 1 8-in. baked pastry 2 eggs case pint milk
1 oz. butter salt and pepper
4 oz. grated cheese
1 Put the tomatoes into the pastry case.
2 Fry the onion in the butter and sprinkle over the tomatoes.
3 Beat the eggs, add the milk, seasoning and most of the cheese.
4 Pour into the pastry case and sprinkle with the remaining cheese.
5 Bake in a moderate oven (350°F – Gas Mark 4) until firm and lightly browned.

Cooking Time: about 25 minutes You will need for 4 servings:
6 oz. rough puff or flaky pastry (86)
2 tomatoes, peeled and chopped
1 small onion, peeled and chopped
1 tablespoon breadcrumbs
2 oz. grated cheese salt and pepper
1 egg
1 Roll the pastry thinly and divide into 6 portions.
2 Mix the tomatoes, onion, breadcrumbs and cheese together, season and bind with the beaten egg-
3 Divide this mixture equally between the 6 pieces of pastry. Damp the edges and fold over, pressing the edges well together. Decorate the edge as liked.
4 Make an incision in the top of the pastry to allow the steam to escape and bake for 10 minutes in a hot oven (425°F – Gas Mark 7), then reduce the heat to 350°F – Gas Mark 4 for a further 15 minutes.
