Vegetable Marrow Soup Recipe

Cooking Time: about 25 minutes

You will need for 4 servings:

2-2 lb. marrow bouquet garni

1 oz. butter

1 pint stock or water salt and pepper

1 oz. cornflour 1 pint milk grated cheese

1 Peel and seed the marrow and cut into small pieces.

2 Melt the butter in a pan, add the marrow and sautd for a few minutes.

3 Add the stock, seasonings and bouquet garni.

4 Cover and simmer until the marrow is quite soft.

5 Remove the bouquet garni and mash the marrow with a wooden spoon or vegetable masher.

6 Mix the cornflour smoothly with the milk. Add to the soup, stir until boiling and boil for 1 minute.

7 Correct the seasoning, add a few drops of green food colouring, if liked, and serve with grated cheese.
