Watercress soup Recipe

Cooking Time: about 30 minutes

You will need for 4 servings:

2 bundles watercress 1 pint milk

1 oz. butter

1 pint chicken stock 1 oz. flour

3 tablespoons thin cream salt and pepper

1 Wash the watercress and chop coarsely.

2 Melt the butter and saut6 the watercress for a few minutes.

3 Add stock, simmer for about 15 minutes.

4 Rub through a sieve and return to the pan.

5 Mix the flour smoothly with the milk, add to the purde and stir until boiling.

6 Simmer for 3 minutes. Correct the seasoning.

7 Just before serving, add the cream and, if liked, a few drops of green food colouring.

8 Garnish with sprigs of watercress.

Carrot soup

Cooking Time: about 25-30 minutes

You will need for 4 servings:

1 lb. carrots salt and pepper

1 onion or leek bouquet garni

1 small turnip 1 pint milk

1 oz. butter 1 tablespoon finely

1 pint stock or water chopped parsley

1 Prepare the vegetables and grate them finely.

2 Heat the butter in a pan, add the vegetables and sautd all well together.

3 Add the stock, salt and pepper and the bouquet garni.

4 Cover and simmer until the vegetables are tender.

5 Remove the bouquet garni.

6 Add the milk, reheat the soup and correct the seasoning.

7 Just before serving, add the parsley.
