Welsh Rarebit Recipe
Cooking Time: 4-5 minutes
You will need for 4 servings:
1 oz. butter 1 tablespoon
1 oz. flour Worcester
1 pint milk sauce or beer
1 level teaspoon made (optional) mustard 4 rounds of buttered salt and pepper toast
8 oz. grated cheese
1 Heat the butter, add the flour and mix well.
2 Add the milk, stir until boiling and boil for
1 minute.
3 Add all the other ingredients, reserving a little of the cheese.
4 Heat gently until the cheese has melted, then spread on the toast.
5 Sprinkle with the remaining cheese and brown under the grill.
Spanish open sandwich
Cooking Time: 15 minutes
You will need for 4 servings:
1 tablespoon corn oil 1 pint milk
1 small onion, finely 2 eggs chopped salt and pepper
1 green pepper, finely 2 oz. ham, chopped chopped 4 slices buttered toast
1 packet cheese sauce To garnish: spring onions or slices of Spanish onion
1 Heat the com oil and saut6 the onion and pepper until tender.
2 Stir in the contents of the packet of cheese sauce, milk and the lightly beaten eggs.
3 Heat gradually until the mixture thickens, stirring all the time. Season to taste.
4 Add the ham.
5 Pile on to the buttered toast and garnish with spring onions or slices of Spanish onion.
