Egg And Cheese Cutlets Recipe

Cooking Time: 4-5 minutes to fry

You will need for 4 servings:

2 oz. butter

2 oz. flour 1 pint milk salt and pepper cayenne pepper 4 hard-boiled eggs 2 oz. grated cheese egg and breadcrumbs

1 Make a thick sauce with the butter, flour and milk.

2 Season carefully with salt, pepper and cayenne.

3 Add the eggs chopped finely and the cheese. Mix well.

4 Spread the mixture on to a wetted plate and leave to cool.

5 Divide into equal portions and shape each into a cutlet shape.

6 Coat with egg and breadcrumbs and fry in deep fat.

Note: A piece of macaroni can be inserted in the narrow end of the cutlet, if liked.
