St. Clements Chiffon Pie Recipe
Cooking Time: 5 minutes You will need for 4-6 servings:
8-in. pastry flan case 2 oz. castor sugar
1 can mandarin oranges a little cold water
1 oz. cornflour
2 egg yolks juice 1 lemon 2 egg whites

2 Drain the mandarins, and make the juice up to
1 pint with water.
3 Blend a little of the juice with the cornflour and the sugar and egg yolks and put the remaining juice on to heat.
4 When hot, pour on to the blended cornflour and return to the pan. Bring to the boil, stirring, and boil for 1 minute.
5 Add the lemon juice and the mandarins.
6 Whisk the egg whites until stiff. Lightly fold in the sauce mixture.
7 Pour into the cooked flan case and decorate with a few mandarin oranges.
8 Serve hot or cold.
