You will need for 1 glass:

4-5 Ice cubes 3 parts golden rum juice 1 fresh lime or 1 part thin cream lemon 1 teaspoon sugar or juice 1 fresh orange (or sugar syrup

2 tablespoons canned, soda water (optional) unsweetened juice)

1 Put the Ice cubes into a cocktail shaker.

2 Pour the fruit juices, rum, cream and sugar over the ice.

3 Shake until a frost forms; strain and pour into a glass or pour without straining into a highball glass.

4 Top with soda water and serve.

St. Lucia

You will need for 1 glass:

4-5 Ice cubes 1 teaspoon grenadine 1 part Curasao 2 parts white or golden 1 part dry French rum vermouth juice 1 fresh orange (dr

2 tablespoons canned, unsweetened juice)

1 Put the Ice cubes into a cocktail shaker.

2 Pour the Curasao, vermouth, orange juice, grenadine and rum over the ice.

3 Shake until a frost forms and pour without straining into a highball glass.

3 Pour in the lime juice, Curasao, sugar and rum.

4 Shake until a frost forms.

You will need for 1 glass:

4-5 Ice cubes 3 parts white or golden juice 1 fresh lime or rum lemon 1 sprig fresh mint 1 part white creme de (optional)

1 Put the Ice cubes into a cocktail shaker.

2 Pour the fruit juices and bitters over the ice.

3 Add the sugar, grenadine and rum.

4 Shake until a frost forms.

5 Strain and pour into a sour glass.

You will need for 1 glass:

4-5 Ice cubes 1 part Curapao 3 drops Angostura 3 parts rum bitters 1 slice fresh orange rind

1 Put the Ice cubes into a cocktail shaker.

2 Shake the bitters over the ice.

3 Pour in the Curasao and rum.

4 Shake until a frost forms.

5 Strain and pour into a sour glass and garnish with orange rind.

You will need for 1 glass:

4-5 Ice cubes 3 drops Angostura

1 part pineapple juice bitters

2 parts white rum

1 Put the Ice cubes into a cocktail shaker.

2 Pour in the pineapple juice, the bitters and the rum.

3 Shake thoroughly, until a heavy frost forms.

4 Strain and pour into a sour glass.

2 parts golden or dark rum
